Is It Possible to Have a Responsible 2 Year Old?

Dylan has been very impressive today. I'm not saying that he didn't still have moments where he's a pretty typical 2 y/o.

Today while I was vacuuming the basement, he finished lunch then put himself in bed. I got up there as he was pulling his covers up. He had a poopy diaper so I had to help him out a little, but I was proud of him for knowing that he needed to take a nap.

Then tonight after a couple helpings of spaghetti snakes and green beans, he knew Mela needed to be fed. I kind of blew him off because I was talking to Wes, then we heard the clink of food in her bowl. He had gone in by himself and dished her out some food.

I love this kid who's so good at taking turns, but not always sharing. Who likes to put the soap in the dishwasher and turn it on. Who typically has a long list of things and people he's thankful for in his prayers. What a great and slightly silly kid.

Great News!!

I'm getting my truck today!!

No more almost dying everytime I tow the horse trailer. And they guy we're buying the truck from is buying our 4Runner. How convenient. This is what it looks like. I'm very excited.

More good news, I took that awful glucose test today and didn't even get sick. With DVS I almost puked and passed out in the waiting room at my OB's office. This time, not a thing.

The New Member Talks

I think Wes and I might have shook up our new ward a little today. I didn't make any warnings about Wes' personality, he did that himself. Yet, people thought he was being funny. I guess there's still some shocks left to come for them.

I apparently talked about stuff that shouldn't be mentioned over the pulpit, because people's comments were along the lines of "appreciating my brutal honesty". I mean that's how I prefer life to play, but I guess no one's thrown the truth at them in a while. I even commented to Wes before church that I wish someone who really knew us would be there, so they could tell us how we did. People who don't know you don't want to hurt your feelings, so they won't tell it like it is.

I think the most disturbing thing about speaking in this ward, was that everyone was paying rapt attention. No one was distracted by there children, or asleep. They were all staring at me. I would have been much happier to have a Roy Gallegher snoring on the 4th row.

Mostly, I'm grateful speaking in church is officially out of the way. I feel emotionally exhausted. I've worked tons this month, and I don't have another work day in sight. I'm really looking forward to hanging out at home.

Delicious

At work, all the guys have a crush on Giada on the Food Network, so we end up watching food a lot. For once I looked up a recipe and tried it.

I know that the very idea of stuffed pork chops sounds complicated, but this really is a 20 minute recipe and it's scrumptious. I didn't even put the sun-dried tomatoes in because Wes doesn't like tomatoes and it was still super good.

Yield: 4 servings

Ingredients
1 tablespoon olive oil, plus 1 tablespoon
2 cloves garlic, minced
6 sun-dried tomatoes, diced
1 (10-ounce) bag of frozen spinach, thawed and excess water squeezed out
1/2 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1/4 teaspoon dried thyme
1/4 cup (2 ounces) goat cheese
1/3 cup reduced-fat cream cheese
4 (4-ounce) center-cut pork chops
1 1/2 cups chicken broth
1/2 lemon, zested
2 tablespoons lemon juice
2 teaspoons Dijon mustard

Directions
Warm the 1 tablespoon olive oil in a medium saute pan over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the sun-dried tomatoes, spinach, salt, pepper, and thyme. Cook until combined, about 2 more minutes. Transfer the mixture to a medium bowl. Add the goat cheese and the cream cheese. Stir to combine and set aside.

Use a sharp knife to cut a pocket into the thickest portion of the pork chop. Stuff each pocket with 1/4 of the spinach and sun-dried tomato mixture and close the pork around the stuffing. Season the outside of the pork with salt and pepper.

In a small bowl combine the chicken broth, lemon zest, lemon juice, and mustard.

Warm the remaining 1 tablespoon olive oil in a large, heavy skillet over medium-high heat. When the pan is hot add the pork. Cook until golden and cooked through, about 4 minutes per side. Transfer the pork to a side dish and tent with foil to keep warm. Add the chicken broth mixture to the skillet over medium-high heat. Scrape up the brown bits from the bottom of the pan as the chicken broth simmers. Reduce the broth by half to make a light sauce, about 8 minutes. Spoon some sauce over the pork before serving.

2. Let Sampson hit full speed without being scared

4. Find and participate in a Ride and Tie race

5. Don't eat more than 3 cookies/day

6. Learn to make 3 new dinners

7. Lose 25-30 lbs

8. Go camping to someplace new

9. Take 10,000 steps/day

10. Be more sincere

11. Read only Church lit. on Sundays

12. Clear the wake with a grab

13. Do 1 tri-sprint and 1 10K

14. Have FHE every week

15. Make a good friend in the new ward

16. Use the air-miles to go someplace awesome with Wes, no kids

17. Go to the temple monthly

18. Grow my hair to my bra strap

I'm in the news!

This is Kirk, one of the nicest guys I know sporting the beard. He's riding Ike, the amazing horse that I won on last month.

This is what you look like when you continue to ride horses when you're almost 7 months pregnant. It's not flattering, but Badger looks good. He's a super gentle Stud that Kirk brought for me to ride. My horse, Sampson, not so gentle, but I still love him even if I won't ride him right now.

Some Thoughts

1. Why do I do yoga, when I feel like it should be pushing harder and going faster?

2. Why does DVS only sleep past 7AM on mornings when I have to get up early to go to work?

3. Did anyone in my new ward got the the U?

4. I've made it to the 3rd trimester and still no itching!!

5. I hate Medicare.

6. I won't eat sushi while pregnant, but continue to ride horses.

7. I feel like I can't get my hands clean enough when I see this many patients in a day.

8. While I feel that I should watch the junk food bingeing, I also feel like we need to hurry and finish our girl scout cookies before it's time to order again.

9. I'm still not sure if the world was ready for my hot pink leggings and purple heels I wore yesterday.

10. I wish I had a girl scout cookie or 5 right now.

11. I hope Heidi is still coming to town later this week and is going to cut my hair.

12. I have a really funny kid.

13. I could use a good book to read.

14. I wish I knew how to change my library holds to a different library.

15. I know I don't live in the city anymore because I can't walk to the grocery store, the vet and the library in one go, or at all.

16. I do love living closer to family and friends. (not that I've seen much of them, I've been working too much.)

17. My husband is being financially generous. How long will it last?

18. I'm considering putting in a Wes warning when I introduce us in church in a couple of weeks.

19. Apples are not chocolate.

20. Time to work again.

So Christmas was like 2 weeks ago...been busy...

Layna and Lance came home for Christmas, unbeknownst to my parents. It's a secret that I almost blew multiple times. I think my status as terrible-secret-keeper should be upped to pretty-good-secret-keeper.

Dylan got way more toys than any little boy deserves. Wes and I thought we were being moderate, but we forgot to take relatives into account.

I made Evan another awesome Christmas sweater. I just think it's funny to see him wear it for the day.

DVS became an independent cookie maker. And we had a great Christmas. The end.
